For our annual team meal, we had the pleasure of dining at Chez Serge in Carpentras, a not-to-be-missed address for lovers of black truffles. On this occasion, we enjoyed a delicious truffle-based meal, including an exceptional starter: ‘Artichoke ravioli and foie gras, parmesan cream and smoked oil, sublimated by delicate shavings of black winter truffle’.
To enhance this starter, we naturally chose to accompany it with the Juliette 2023 cuvée, offering a perfect balance of local flavours.
Juliette 2023: freshness and finesse for truffles
Juliette is an organic dry white wine from the high altitude of the Ventoux, where the freshness of the climate enhances the aromatic expression of the grape varieties. A blend of Clairette and Grenache Blanc, it is distinguished by :
A fine, bright nose of white flowers and citrus peel.
Fresh and rich on the palate, with aromas of lemon zest and citrus fruit.
A beautiful aromatic persistence, ideal to sublimate the delicate and complex flavors of truffle and foie gras.
The limestone and slightly clay soil, located at 300m altitude, offers the varieties Clairette and Grenache Blanc, an optimal maturity revealing all their finesse. The night harvest of grapes also captures this unique identity. A vintage of rare elegance, rated 92 by "Decanter".
